I walked out of the lounge today and came across a room I have never seen before........the kitchen! To my surprise there was actually food in there waiting to be cooked. Over the last few months I have had to change my diet fairly radically and after recent events have gone to an entirely 'clean and lean' way of eating. With this I am on the lookout for interesting meals that fall into this category. This morning I found one and with the promise to Nick if I find a new recipe I will cook it first as a trial (it also gives him a break from that weird room at the end of the lounge).
So Spicy Chicken with Salsa and Spinach, Mango, Avocado Salad was my first attempt at a new recipe for years. The salsa was fairly straight forward red onion, tomato, garlic, cumin, lime juice and jalapeno chili all finely chopped and left at room temperature for all the flavours to marinate.
On to marinating the chicken with olive oil, lime juice, chili flakes and coriander (ok I read the recipe wrong the coriander was for the garnish.....ooops!) into the fridge for an hour. While the chicken was cooking I sliced up an avocado and a mango and placed them on a bed of baby spinach with a drizzle of lemon olive oil. Chicken on top with the salsa sprinkled on top. Photographically a success!
I was told by his lordship that it was very enjoyable (I think he just enjoyed a meal he didn't have to cook!) and is a definite make again. Too much to do for a meal after work however a good lunch or dinner meal for the weekend. No wine anymore to go with Saturday lunch but a chilled water instead.
